Beet and Dill Hummus

This colourful earthy dip is packed with minerals, phytonutrients, protein and fibre. 

  • 1 can of chickpeas, drained (15 oz) or 1 & 3/4 cup cooked chickpea
  • 2 tbs of tahini
  • 1/4 cup of extra virgin olive oil
  • Juice of half a lemon
  • 2 cloves of garlic
  • Sea salt and freshly ground pepper to taste
  • Several sprigs of fresh dill
  • One small roasted beet (chopped) *can use canned*

 

  1. Add ingredients to food processor or blender.
  2. Pulse until smooth.
  3. Top with fresh dill and olive oil. Enjoy!
