Mom’s Morning Granola

Mom’s morning granola! My mom has been making this recipe for years and I love starting my day with this nutritious, fibre-filled bowl! Honestly, I could live on this stuff!

12 cups rolled oats
1 cup each of the following:
Sesame seeds
Pumpkin seeds
Sunflower seeds
Shredded coconut
Buckwheat flour (you can make it in your blender by grinding buckwheat groats)
Sliced or chopped raw almonds

Toss together with 2 tablespoons cinnamon in a giant bowl or pot.

Warm 1 cup honey and 1 cup coconut oil
Pour over the oat mixture and blend thoroughly.

Thinly spread about 3 1/2 to 4 cups of the the sticky mixture onto a cookie sheet.
Bake 10 to 15 minutes at 350 degrees until toasty golden brown. Makes about 5 cookie sheets of granola.
Let cool before transferring to jars or tins. Throw on some berries and kefir and Voila! Breakfast of champions! Mother approved!
